Get over it! Chinese people spit. In spite of the education in Beijing before the Olympics in 2008, 99% of the population continue to spit.

It doesn’t matter is they are high-ranking officials, school children or just normal people.. They spit. You’ve moved from the West to the East and so simply accept it. (more…)

Season Your Wok

DO:  So you fancy your hand at Cooking Chinese food?  Its not difficult but the secret behind the real flaour of the food lies in the wok.  You must first ‘season’ your wok – an aging process if you will.  But that’s easy too and you already have everything you need to do this.

What you need is:

  • Your brand-new wok
  • Your stove
  • Cooking oil
  • A damp cloth large enough to cover the wok in-case of fire

It is a very simple process to season your wok and make it ready for ‘real’ use.
